Ingredients

200g self raising flour
pinch baking powder
40g brown sugar
175ml skimmed milk
1 egg, beaten
2 tbs sunflower oil
zest 1 orange
75g frozen cranberries, defrosted
25g plain chocolate, chopped

Method

1. Preheat ovcen to 190C. Sieve the flour and the baking powder into a bowl, then stir in the brown sugar. Make a well in the middle of the mixture.

2. Beat together the milk, egg and oil in a jug; pour into the well. Beat until just mixed. Fold in the orange zest, cranberries and chocolate.

3. Spoon into 12 muffin cases and bake for 15 mins. Leave to cool on a rack, then serve.

Notes

Other flavours:

75g fresh cherries, pitted, 25g desiccated coconut and 2 drops vanilla essence

75g fresh raspberries and 1 apple, cored and chopped.
