Ingredients

50g butter or olive oil
3-4 parsnips (350g), cut into chunks
1 small onion, peeled and quartered
1tsp curry powder
500g stock 
salt and pepper
cream, chopped chives, croutons to serve

Method

Heat butter/oil for 30 secs/100C/Speed 1.

Add parsnips and onions, sprinkle with curry powder and chop 6 secs/Speed 5.

Scrape down the sides with spatula.

Soften for 5 mins/100C/Speed 1

Add stock and seasonings. Cook 12 mins/100C/Speed 2.

Puree for about 1 min on Speed 9 until smooth.

Serve with a swirl of cream, chives, croutons if wished.
